Once again we have another instalment from our resident chef Seabiscuit. This time he is blessing us with his patties recipe, he has made them huge, ‘a healthy size’, cos thats how he rolls, but you can easily make them human size portions. (he wont like that ;))
450-500 g plain flour
2 tbsp turmeric
200g butter.
1lb mince, chicken etc
Peas onion carrot etc
Scotch bonnet
Curry powder
Can tomatoes small
150ml stock of whatever meat
Pastry
Mix the flour and the turmeric together. Then cube the butter, knead this into the flour/ turmeric mix until there is no lumps. Add a pinch of salt. Now add ice cold water, gradually bring it in from the edge of the bowl, using a fork. ‘Now get your hands in dere’. Bring it together, but don’t be too rough, make a ball of dough and wrap it in cling film and let it chill.
Filling
Get your mince, chicken or whatever meat or fish you would like to use. Cook that together with the vegtables, the scotch bonnet, the curry powder, tin tomatoes and the stock.
Roll out the pastry, cut with a round oject eg a saucer. Drop in a bit of filling on one side. Wet the other side, fold it over and crimp it using a fork. Make fork marks at the top. Then baste it with a lightly beaten egg. Put in a pre-heated oven, gas mark 6 for 25 minutes.
